I am putting the full body image in all 3 images on the sheet from assets but it doesn't save it and keeps going back to just having the one single token on it

You can also just re-drag the Red Dragon from the MM to your encounter. The new version will have images already set up.

The Monster Manual is already updated with the newer style images. You may need to close and reopen the module in your Module Activation window.
