D&D 5e - [INIT] Modifier
Is there any way to create a modifier that would make the next roll count as an initiative roll and update PC's the CT entry accordingly?

I'd like to be able to use rolls other than Dexterity to determine initiative scores selectively on the fly without having to update the CT entry.

No, there is not any way to roll with stat other than Dexterity.
This could be done by having an extension that adds the ability to change the assigned ability for initiative and update the rolling code to look for the assigned ability (assuming PCs only); or you'd have to come up with a different alternative, if you wanted to apply to NPCs as well.

You could always use the INIT effect. Say, a character's DEX bonus is +0, but you want to use INIT and they have a 14 (+2). You could give that character an effect that is INIT: +2 and it would effectively be the same thing. You just have to do a little math to set it up.

Agreed. I was hoping for a way on the fly with just 1 click to flag the next roll as being an initiative roll irrespective of what it was.
In a perfect world for me, the modifier bar would look something like this:
