Attacks of Oppertunity
So I am running a mock battle. One of the PC's has reach and gets an AoO. What's the easiest way to run this on FG? Should I just keep hitting 'end turn' until its that PC's turn and then return the order after the AoO is complete?

You can open their PC sheet, and just make the attack directly from their sheet. No need to advance initiative.

I just have everyone pause in the initiative order, then have the PC/NPC, etc with the AoO make their attack. Then resume the regular initiative order.

Any creature, PC or NPC can carry out actions at any time. The initiative order is just a tracker, it doesn't restrict what any actor can or can't do.
