Masking question
Is there a way to have a PC with darkvision see an area of the map where PCs without darkvision cannot?

Not at present. All players see the same as what the GM has revealed.

Technically speaking, have a second copy of the map, reveal the infravision areas and just share with the relevant player. Best I can think of.

Having multiple maps might work at a very basic level (for exploration), but as soon as any interaction with other tokens is required (combat, spell casting, etc.) then a single map would need to be used as you can only have a token linked to a creature on the combat tracker present on a single map - i.e. you can't have a token representing, for example, "Skeleton 1" in the Combat tracker on more than one map.
