Editing consumables, tracking ammo

Is it possible to edit consumables? We can't figure out how to reduce/increase it manually - even the GM can't. Even if you remove and put on your spacesuit, it just adds Air to consumables rather than resetting it, which isn't desirable behavior.

How do you track individual ammo for something like the Bolt Gun? You have to reload it after each shot, but how many ammo does it have in each reload?

And to confirm, you can push combat rolls, like shooting at an enemy? Rules don't have exception about prohibiting it AFAICT.
