I have an Ultimate license. What advantage is there in buying the FG Player's Handbook and FG Monster Pack when I get all the Class, Race, Spell, Equipment, Background options with the SRD Data module and all monsters with the SRD Bestiary?

1) you don't get *all* of those things in the SRD - there are quite a few things missing (deliberately).
2) You get lots of artwork, portraits and tokens.

While the SRD is an awesome freebie, it is severely limited in its scope. Think of it more as a demo or teaser.
I assume you bought an ultimate license to be a dm/gm? Trust me, your players will (eventually) want more than what the SRD provides.
Also, by buying the PHB you support both Smiteworks and Wizards of the Coast. It's more than worth the cost for all the stuff you get with it.
Here are 2 decent discussions talking about the difference between the SRD, the PHB and the Basic Rules. In short, the SRD and Basic Rules have some overlap but together have about half of the options the PHB has.

If I buy the books for Classic and I upgrade to Unity, do I have to buy the books again?
No, the DLC are shared between the two products.
