I’d like to see Menzobarrenzan boxed set, Ruins if Zhentil Keep boxed set, and Myth Drannor boxed sets.
The Bloodstone Pass series H1-H4 would be great for some high level play as well. Lastly Under Illefarn would be cool

Like John said, it s not that hard really, it s just very time consuming and depends if it contains, pregen, high level NPCs, unique monsters, complex maps to recreate (the originals are not very VTT friendly and requires some serious editing to remove numbers, secret doors etc), special objects or mundane objects not in the PHB or DMG, if converting these books, you also need to know how to create skills, spells, races, classes, kits and have some knowledge of some automations. You can always have a look at the ones already made (if you own any of the player's handbooks), copy them and make some adjustments as required.
First have access to a good PDF (to limit typo)
Copy past the content in a word/text editor software
Correct typo, delete extra lines etc...
For these books creates associated races and kits.
Export ...voila (somehow)
Learn the software first - backwards and forwards. Once you have that, your question will mostly answer itself in a self evident manner.
Ultimately, you need to recreate the whole product in Fantasy Grounds - reference manual included. Refer to an existing product that's similar to the one you want to convert - look at all the data that's been entered for that module (the list in the Library window is a good place to start).
For the module you want to convert, you'll need to manually enter all of the data, both in the reference manual (which will be a similar layout to the actual product) and then in the various data records - images/maps, NPCs, classes, items, spells, etc., etc..
The goal is to have a FG campaign that has all of the product information recreated within that campaign - then you can export that to a module, which is the end product that FG uses.
They are still people to convert the old AD&D modules? Because I don't see anything new to sell in the store after the cool Necromancer? It's a pity :-( I need to update my FGU Library with the Undermountain Box Set, the Sages & Specialists or Of Ships and the Sea, but it's all missing for now...
Of Ships and Sea would be my preference to have a good conversion of. It is almost all just Story entries, tables, and some additional images.
With the new abilities for Vehicles someone could build off of that source book some interesting things.
