It feels like the animated token module always lags the game quite a bit anytime I come across those in my assets.

Is it possible to uninstall, delete, or disable particular token modules now that they auto-load in every campaign?

Tokens don't auto load in every campaign. They are initialized when you start up FGVTT but they aren't loaded into your campaign unless you specifically select them. This assumes, of course, that you aren't using extensions which automatically uses such tokens. So, short answer is, that unless you are actually using animated tokens they aren't going to cause any kind of lag due to them.

If you are experiencing lag then that will be due to some other factor, such as insufficient graphics memory, having dozens of modules open (that you don't really need) or using very large maps with a lot of occluders or lots of lights.

Or does the OP mean they cause lag when you are in the assets library? I can see that if you did a search for instance on "orc" and multiple animated tokens showed up that would/could cause lag. Not sure a way to avoid that.

If you got the animated token modules from the FG Forge you can disable those. Ones from the FG Store you can not disable.

This is more of what I was referencing, as I often do token searches and notice a moment of lag when they appear in the asset library searches. So, yes, my question was how to disable them from appearing in the library at all.

It appears your last line answers my question, in that store-bought asset tokens cannot be disabled. That is disappointing, but such is life.

I appreciate all the replies, they were speedy and very informative. Thank you.
