I've acquired and even created a few VTT assets like maps and tokens (albeit the latter was using a piece of software to convert photos to icons) over the years. If I want them to be available to FGU, I imagine they have to be in a specific folder on the same drive as the rest of my FGU assets. So where do I put all those files if I want them accessible?

It depends a little bit. In general, anything you want to use in FG needs to go into the FG data folder. That's the place FG stores all the modules, rulesets, campaigns and your content. You should have set the folder location during install and you can find it easily by clicking on the folder icon in the upper left corner on the FG launcher. 66599
In this folder you will find
- the "images" folder, for generic images and assets used for maps
- the "tokens" folder, for images used as tokens (what you see when a character is placed on a map)
- the "portraits" folder, for PC portraits
Anything in these folders will be available globally in every campaign.
But you can also go into the campaigns folder. There will be a folder for each campaign (something you might also backup from time to time). Each campaign folder can also contain an images, portraits or tokens folder. Anything in those subfolders will only be available for the specific campaign.

Thank you for a quicker response than I expected. And a better one as well. I've managed to move a massive number of image files into those directories, including some "homemade" DR Who tokens in case II ever get the chance to run a game in that sandbox.
