I understand that it is possible to run FG on a Steam Deck, and since I just got a new one I'm open to trying it if I can figure out a game. I wouldn't want to do that exclusively, of course. But I'm wondering howe the people who do it manage to make it work for everyone involved.

Steam Deck (Valve handheld gaming console/PC, running Linux) is not the same as a Stream Deck (Elgato device to attach to a PC to get additional shortcuts etc)!

That being said, you can install Fantasy Grounds on the Steam Deck through Steam. (Didn't try the normal installer from FG page, but should also work, since everything is stored in your home folder.)
But with the small and low resolution display, it's rather limited without an external display. I would also advice to have a real mouse and keyboard attached, but depends on what you actually want to do.

I did run the Steam Deck in Desktop mode to make it easier to switch between FG and other applications (browser, PDF, Discord...). I was the GM in that case with 5 players. So basically like running it on any other computer, with separate display, mouse and keyboard.
