In an attempt to somewhat automate the Frenzy edge...
Is there a way to remove the Wild Die from a melee attack?
I can "Clear Dice" in the "Trait Info" popup window but it always defaults back to a d6.
Also, trying the left-drag attack dice and right-clicking to add another dice results in the lower of the 2 skill dice being used?

Lower of the 2 "skill" dice? It always works fine for me this way. It will roll 2 skill dice and a wild die (assuming you only added 1 die for something like Frenzy) and give you two results, the highest 2 results from all of the dice rolls, so if one of the skill die and the wild die are the 2 highest results then that is what it will show, but if it were both of the skill dice that were higher than the wild die it will show two rolls, both with the result of the skill die rolls. At least that's how it works for me, which is how it works per SWADE. But it doesn't change the die types or anything.

To make this work as zarlor describes, do this:
Make a subattack named Frenzy.
On the subattack, set the number of attacks to 2.
Target one or two enemies.
Use that subattack to roll attacks.
It will roll two attacks and one wild die.
