The 1st Line in a new Table vanishes, and the text of the first line overwrites 2nd line's text. You will see this during table creation.

To reproduce, create a new table. You should see two empty lines. Type 1 and 1 in the number fields and then type One in the label field. Notice how when you type the first 1 in the first number field the blank line vanishes and if you look closely you can see the - from the other starting line overwriting part of the O in One.

This appears to be a table display problem (off by one?) since if you now close the table and re-open it you will see two lines the first line and the second empty one as expected.

In the second empty line type 2 in the first number box and you should immediately see the two lines be displayed as one line. I just filled out the rest of the line so its 2 2 and Two.

Once again if you close then re-open the table you should see two lines with the correct information.

This one was really confusing me since I was working on a bigger table and added a bunch of blank lines to start and then was short one line then added one more then when I went back to the table it had an extra blank line. :(

I did this in the Core RPG ruleset so it likely affects other rulesets.

Yep, I can reproduce in CoreRPG and in 5e. It must have been something introduced in the very latest update since it was working before I update.

Just pushed a hot fix that should address in the application. Please run a new Check for Updates.
