Is there a way to increase the font size?
I run FGU on a 16.1" laptop screen at 1440p resolution and my eyes are not what they used to be and you guys are killing me. scaleui is not an answer because I don't want the CT to be the size of half my screen. I've looked for an answer but can't find one, am I missing something?

Use one of the various big font themes from the Forge or create your own. I don't use any of these, but you can see what you think:

As DM, I need to read a lot more than the player. I have tried the extension from that first link, but I didn't implement it because I don't want it making the font larger for the players. Do you know if it does, or if it only increases the font size on my machine?
It might be a good workaround for now. But I am surprised this is not something built-in with the program, considering they implemented a feature that includes a separate token that shows in the top-right when you hover over a token, which isn't really needed because anyone can roll the mouse wheel and enlarge over the token on the map to see it, but there is nothing in regards helping read text. Unfortunately, my sight really diminished this past year which grieves me greatly. Ugh.

Extensions change the font size for both the players and the GM.
There's a few items in the FG wishlist with "font" in the title - review them and vote on the ones you'll feel will help. You could also look into the various accessibility options in your operating system - such as magnifying glass or similar zoom options? For example - on Windows the <windows key> + <plus sign> will magnify the screen. <windows key> + <esc> to cancel.
