Wasn't able to attend myself but skimmed the video. The "updating the visual identity" comments make me worried since I don't want the program's UI to change (I paid for it because I like how it is). But as long as my UI using the default FG themes doesn't change, I will stay happy. It would be nice if there was a way to manually choose what version of the program I was using so that this wouldn't be something worth worrying about.

I think I can confidently say you are in the minority if you are in favor of keeping the UI/look untouched versus trying to change/improve it given it is the most common criticism of the program.
I would not be a fan of FGU trying to maintain backwards compatibility (if even possible). Trying to maintain backwards compatibility for any major overhaul just isn't feasible given it compounds the amount of effort is needed to make any changes in the future since you are maintaining multiple version of the same program. That extra time spent by the devs could be much better spent working on other improvements vs working to maintaining a more than likely less popular version of the program.

The whole reason the UI is not entirely revamped in FGU is for backwards compatibility?

The UI is going to be improved (and has been) continually over time and so is everything else.

A versioned installer instead of a web installer would solve that problem. If the UI gets overhauled to the point where I no longer enjoy using the program I could just save the installer for the version I like and never update it again. It wouldn't require maintenance as far as I know since nobody using an older installer would expect new updates.

Unfortunately, it doesn't quite work that way, since every product in the entire ~3.5K catalog would also have to be saved off as well as the installer to install all the old versions of those products. The application and UI does not live by itself, but part of the whole ecosystem.
