I'm trying to figure out a few things about creating some custom races in D&D 2e.
1) Is there a way to have a race give you the option for selecting the ability score adjustment? For example, when selecting the race can I have a window pop up that asks whether I want to increase Strength by 1 or Constitution by 1?

2) Can selecting a race automatically give Non-weapon Proficiencies? For example, if I select a new type of dwarf, can they automatically add the Appraising NWP to the character when doing character creation?

3) Is there a place to find out more about the different syntax for the creation of D&D 2e races and classes?

1) No, there is no automation for "choosing a ability modifier".
2) Races do not have the ability to add skills, Classes and Kits do.
3) I would recommend finding a example in the existing content and reviewing the documentation for the ruleset (and the general FG docs).

Creating a Racial Ability like the one for the Variant Human should work.

Skill Versatility: You gain proficiency in two skills of your choice.
