Hello, we're looking at getting into VTT since half of our group is moving away /cry.
My question is how do we handle taking turns as a DM?

3 nights per Month we play Campaign A where She is DM, and once a month we switch to Campaign B which I DM.
There are 2 other Demo players who play in both games.

How many copies of books would we need, and how many ultimate licenses?

Thanks! (p.s. I swear I googled this first)

Each DM will need 1 Ultimate license if there are demo players. Otherwise everyone will need a standard license (Any standard license can join another standard license holders game). Without an Ultimate license only one demo player can connect to a game.

Each DM will need to buy whatever books they want to use. See here for more https://www.fantasygrounds.com/forums/showthread.php?32987-What-do-I-need-to-play-5e

See here for details of what you get with each license type https://www.fantasygrounds.com/store/

And welcome to the forums.

Following up on Mr. Z's post, it may well be less expensive for everyone to purchase a Standard license rather than purchase 2 Ultimate licenses. I know Steam used to have a 4 for the price of 3 standard license deal, but not sure they still do.
