First - sorry if this is elsewhere, I'm not sure what 'terms' to search to find it...

I've watched a youtube video (FGC Presents: DM/GM 101 Class Fantasy Grounds Unity 2021), and there's a spot where he shows that he preps by setting char sheets for monsters, characters, etc in a particular place for ease of screenspace management.

Fine, easy enough during a current session. Also, this seems to be fine if you set things up like this and leave the NPCs in the combat tracker. But, if I want to do this with all creatures/NPCs in a given dungeon, but then remove them from the combat tracker, the next time they're placed in the tracker, the char sheet for the NPC/monster returns to center screen.

Is there a way to force NPC / char sheets to always display in one spot?

The way FG remembers the location is based off the underlying database records. Character sheets, even for PCs in the combat tracker, will have the same database entry so should open in the same spot. NPCs in the CT have a different database entry for each NPC in the CT, with standard FG you can't set a window for a specific NPC to appear at a specific place.

A video I saw managed to do it, but it required work during game prep. The DM when prepping the encounter, opened each npc sheet and placed them in the same position on the screen. Then when running the game, they would reopen in the same position as before.

There was an extension for FG Classic (Single Window, I think?), that would open windows of a certain type in a given spot. I don't think it was ever updated for FGU though.

No, it was done by manully opening each npc, and placing them all in the same location, layering them. Then when you click on an npc in the tracker, they open in the same location. No extension involved.

There was an extension for FG Classic (Single Window, I think?), that would open windows of a certain type in a given spot. I don't think it was ever updated for FGU though.

There is a new setting option in Fantasy Grounds that will save your windows locations if you leave your windows open before exiting. You still have to resize and place manually. The older extension was "Windows Saver", but this functionality is now included and built into Fantasy Grounds.

and it does sort of solve the issue with NPC sheet placement, with the caveat that the first NPC sheet will have to be placed manually where you want NPCs to appear, and then you will only have 1 NPC sheet at a time appear in this location. I think ctl+click overrides the setting but the new NPC sheet will open at the default position.

I use this extension alongside one called 'open on turn', which automatically opens new PC or NPC sheets as you move down through the combat tracker. This combination really works for me for keeping my desktop sane!
