I've never used this platform, but I've got a bad case of FOMO, so I bought the Ultimate license since it's on sale. I'm thinking about gifting a Standard license for my best friend while it's on sale. However, she'll probably never play unless it's with me or one other friend who also has an Ultimate license.
If she will only ever play with Ultimate hosts, is there any benefit to having a Standard license over just a free demo account?

Nope, not if she will only be a player for those with Ultimate licenses. Maybe gift her some of the dice sets instead? Those are player/client specific and are not something a host can share with their players.

The other potential benefit is if she wants to get a core player's character creation book and create characters for herself without relying on the host. Also, if you gift anyone, make sure it is a separate transaction, it's easier to gift than combined with your stuff.

I actually think she'd enjoy creating characters. What is a "core player's character creation book"? Do you have a link or a recommendation to search for?

It depends on the rule set, but generally a "Player's Handbook" or source book would suffice. She can decide later if she wants to expand upon that.

If your friend ever wants to be the Game master in the future and only would play with you two with the ultimate licenses, she would only need to get the standard license not the ultimate.
