I really want to be able to use the maps, tokens and the like on a screen for my players

Is there any way to use it with just one laptop and the TV as a second screen?

If you want to display a player version of the map, you can start up another instance of FGU on the laptop and connect to your game. This may be a little too much for a laptop though, so you may want to just run one instance of FG (GM instance) and display it on the second screen - you'll probably want to experiment in your setup.

I've been using it FTF for over a year, but I use two separate computers. I have an old laptop connected to the TV and join the session with it just like any other player with a free account. My more powerful computer runs the GM session with an ultimate license. We tried letting the players use minis on the tv but it just didn't work well in combination with npc digital tokens.

I run games at my table using a Dell laptop and open a 2nd instance of FG and put that on my TV Screen. With that said I've also started using Owlbear rodeo if I just want put a map on screen as well.

You'll need to experiment a bit to see how much level of setup you want to experience as you get your game ready.
