My DM just deleted a 50+GB network.log file from his FGU root directory...
Is this a normal size?

he has a small drive and it was filling up...

The network.log file should reset every time that FG is restarted. Is the GM leaving their server running continuously?

No, that's far from normal. Mine is at 817Kb; as Moon Wizard is alluding to if FGU is left running then that would build up the log file. However it would need to be running for an awful long time to build up to 50Gb

The GM is going to need to monitor the log file size and restart FG periodically. Probably weekly would be sufficient and easy to remember.
