I can resize a token by using the CTRL+Mousewheel however it only seems to last as long as the image is open, when I close it returns to the original size. Can I keep my size settings when I close a map image? Thanks.

If a token is tied to the combat tracker, it will be resized to fit the space defined in the space field of the combat tracker whenever the image is opened. If you want a different size, adjust the space field to be the correct size for that creature.

hmm so I assume a 5 size and a 5 reach is medium size. so would small be 4, tiny 3 and large 6? in both?

OK in testing, I could get the large working by going up in numbers but anything from 1-5 remained the same 55722

What I was hoping for was something like this with equivalent reach as well the bear is Large then Medium then small then tiny 55723

Below are the official PF1E sizes.
But in FG anything less that 5 is treated as 5. So Fine, Diminutive, Tiny, Small, and Medium will all take up one 5 ft. square of space and have a 5ft. reach.

Sorry, let me clarify, this is NOT a combat tracker token, this is an asset token (like a table or a bed). They seem to resize themselves if you close the image. I want to permantly enlarge them, is this possible?

Okay, I think I have figured it out, I have purchased the Meanders Asset pack (as well as other asset packs), which is loaded as a module I guess (I can't remember). When I search for an asset, I see some assets under "tokens" which are really images, for instance a mine cart (minecart.png). I want this to be an image where I can resize it with the little white handles in the corners. However, I don't know where these are stored on my computer, I can't find them anywhere in the fantasy grounds sub folders.

Answered in your other post; you don't need them as images. You can use tokens.

Ah yes, I forgot about that. A solution that I've mentioned in the past. I'll blame my bad memory on it being a new year! ;)
