Sorry I'm not used to using forum posts, but I can't seem to find anything about this online.
I've been struggling with assigning my players as Crew to their starship (The Terminus Wild from the Attack of the Swarm AP).
I've looked at other forum posts and the wiki, only to find out that the UI is way different! (and much better!) that what I'm seeing. Is this a setting? or a Community Addon?

Welcome to the forums.
Try going into your rulesets folder in FG data (click the folder icon top left of the start screen to get to the folder) and delete the SFRPG.pak and CoreRPG.pak files and then update FGU. If you see any folders inside the ruleset folders delete those as well.

The PC starship sheet has been updated to streamline the process. To add crew to the ship, you just need to drag and drop a token from the PC sheet or a link from a NPC record sheet. This will add it to the crew list and the player can change their assigned role on their sheet.

Sorry for the late reply but this didn't work, I still have the old clunky UI shown in the imgur link.

So the wiki probably has the older look, rather than the updated one as Superteddy says above.
To add a crew member to a ship add the ship to the ships tab in the Party sheet by dragging from the PC ships window; and then drag a PC into the crew section from the character selection window.

I created a demo video of how to add crew to a starship. Let me know if you still have questions. https://youtu.be/dZshoI3LJj0

Thank you for the video. It would be nice to have more tutorials, but I hadn't noticed / figured out that you change roles on the character sheet!

I made this video, in the hopes that someone out there can help me with the ship combat in FGU for Starfinder. For some reason, PC ships do not hit or link in combat. I have been searching for weeks and have only found videos from 2 years ago or longer. Could someone please assist me in solving these issues or make a new tutorial video for GM's and players in 2023 or at least walk me through the steps and I'll make a video myself? Thanks and happy gaming

Those would be bugs and best to report in the bug report thread to help get resolved. Thanks for reporting.

Tenraix,
I have been working a lot of this out recently, too. I think I can help you here.
What I discovered is that you have to drag the action (the attack roll icon) onto the target ship (either in combat tracker or on a map), and then it behaves as you expect, with the attack roll directed to the target ship and evaluated. If successful, it adds an item in the ship combat tracker to assign the damage to a quadrant or cause system glitches as appropriate.
There may be two ways of thinking about this: 1) the action is really tied to the character and not the ship and 2) multiple gunners can potentially attack different enemy ships, so you need to be attack-specific in your targeting.
Hope this works for you.
