I’m using the character generation wizard for 5E in FGU, and the methods of using dice from within FGU to generate character abilities seems kind of limited.

For example, in Shard you can select 3d6, 4d6 take the highest 3, or 2d6+6. In addition, you can select to roll 6 times — or 7 times and take
the highest 6.

FGU is missing both the 2d6+6 option and the roll 7 times option. Are there ways to do this within FGU without reverting to rolling real dice and just manually entering your totals?

You could just roll the dice in the chat window; and replace the ability scores on the character sheet. The character wizard is designed to be used with the official options from the D&D core books.

It could also be added via extensions as roll options, or dragged to a hot key as a /die 2d6+6.

At about 3:30, Matt uses “Manage Characters”
to bring up a window that is pre-slotted for rolling abilities, including rules at the bottom showing “roll 4d6, drop 1, add 0” — which can be changed.

Does that still exist in FGU? Here is a screenshot:

No FGU doesn't. That was a function of FGC that was replaced with the Character Wizard. The CW has a lot more capabilities than Manage Characters did, but it does not yet have the stat generation abilities.
