I checked the forums and I don't think what I'm trying to do is possible, but is there a way to turn off the mechanism that "remembers" portions of the map already visited when using LOS?
I know turning LOS off and on again on the map will clear it, but I was wondering if there was a way to disable this completely.

There is not, no. You can right click on a token and select the reset fog of war - but you do need to do that for each token. Or as you say remove and replace the tokens.

using the shield from the combat tracker will allow you to move all of the characters at once and it removes/readds them to the map. I love the move function of this but really hate that it also makes them lose LOS on the map. I use to use it when the party planned on travelling back to an earlier portion of a map and i know they will not encounter anything but stopped doing it as they would lose their LOS memory.

Instead of using the skull icon to move the PCs select them all using the group selector at the top of the map and hold SHIFT whilst moving them. This will preserve the LoS.

I had not thought of that one before but GREAT idea!
