Hello,

Is it possible to have a note that anyone in the party can edit? I can create a note and have the party read it, but they cannot edit the content at all.

Only a maximum of one player and the GM can edit a note at any time.

If a player creates a note, they own it and can set it as "Public" so others can see it, but only the owning player and the GM can edit the note.

Otherwise, there's the option mentioned by @damned.
