I've seen a few cases where the Specialization field on the Character Class & Level is blank. This seems to mostly happen when using the LVL UP feature of the Character Wizard.
To recreate in a new 5E campaign, no extensions:
Load PHB
Create a new character using the Character Wizard, filling out any required options
Race Tab
Race: Human
Language: Elvish
Class Tab
Class: Paladin (Level 1)
Paladin Skill Proficiency: Athletics, Persuasion
Background Tab
Background: Acolyte
Languages: Dwarvish, Giant
Commit character wizard to create the new character
On new character sheet, click Magnifying Glass to open Class & Level menu
Click LVL UP
Increase Paladin Level to 2, COMMIT
Open Class & Level menu again
Click LVL UP
Increase Paladin Level to 3, select Oath of Devotion, COMMIT
Open Class & Level menu, specialization is not shown
