How does one switch out the table top graphic?

Within the campaign, go to Options -> Background Decal.

Yes but thats just decals and there are only 3 of those. i want to change the desktop to more of a parchment look or cracked stone

To change the whole desktop then you'll need to load a Theme extension - there are a few that come with FG, and more available in the store, Forge and the forums - load only one at a time.

Note, you can add any image as a Decal, not just the 3 you see. But, that does not sound like what you want. There is/was also GM Winter's Theme maker extension that can help you create a custom theme of your own.
