So, my gaming group wants to do an online game, which we have never done. They decided on Fantasy Grounds, I went ahead and purchased Ultimate because the demo version wasn't really a demo of the product, you can't do anything with it.
I am so baffled and confused.
I can't find a "Running your first Fantasy Grounds game" help page. Or even a step by step using it for the first time guide. The online documentation is way too much information right off the bat, is there anything else I can look at? I've tried the videos as well, 20 minutes into the first one and he's going over changing dice colors.
I'm looking for some guidance and help.

Honestly, I'm willing to pay someone for a tutorial on this software, since I just dropped $170 on it and can't use it at all.

Welcome :)

Perhaps their is too much information, but we all learn differently and have different needs so people publish what they want/need.
A couple of place you can start;

Quick Start Guide (https://fantasygroundsunity.atlassian.net/wiki/spaces/FGCP/pages/996639260/Quick+Start+Guide)
User Manual (https://fantasygroundsunity.atlassian.net/wiki/spaces/FGCP/pages/996639165/Fantasy+Grounds+Unity+User+Manual)
Fantasy Grounds Academy (https://fantasygroundscollege.net/) (free classes and resources)
Intro Video (https://youtu.be/QMOeEBS-_20?t=43); this is a one hour class I did some time ago. I consider it fairly concise overview at one hour, but it has not been edited to take out the pauses that are natural when teaching others.

I remember that learning curve just before lockdown. Wise investment it turned out now DM’ing 2/3 times a week.

Assuming your referring to 5E. I found these links invaluable.

The starter free (was during lockdown) campaign module for mines of phandelver was a good starting campaign.

Just don’t worry about lighting and stuff until you and your players are able to navigate an encounter and their characters. And don’t worry that your watching classic version videos.

Even if you're not interested in D&D 5E the 5E sample campaign available here is a good way to get to know FG: https://www.fantasygrounds.com/forums/showthread.php?28150-New-5E-Sample-Campaign-Tutorial-Available

Install this as a campaign, load it up, then go to Campaign -> Story and open the "00 Welcome to Fantasy Grounds" story entry and read along...
