Can't edit NPCs in encounters

So I was using this method in the past where I would create an encounter then drag an NPC into it and I could then unlock it and change the stats. However, now I can't do that, it is stuck in readonly. Can anyone help? Thanks.

You cant edit the original NPCs - you can make copies of them (just drag them a little distance and release) and then edit those copies.
