Hi, Im starting a new campain (mines of phandelver). I disabled the mask on the map (Gragmaw Hideout) and line of sight works like a charm for the players. But the can see the whole map greyed out. Is it possible to hide the map in black? So they only see the map when they have first explored it? And then the fog of war masks it in gray when they move out of a room?

If you added tokens then toggled the line of sight and/or lighting options, then the fog of war will be remembered for every token that was on the map when you toggled the options. You can re-add the tokens from the combat tracker to reset the fog-of-war for the tokens (or use the right-click menu for each token under Visibility menu).

By default, if the token has not had a section of the map shown as visible, it will show as black. You can use the Player Preview option on the GM side to show what a token would see.

Welcome to FGU.

No, the fog of war persists and shows the area where the players have been in gray. If you want you can right click on each token and select reset fog of war. Or you can remove the tokens and place them back in the map again. But there’s no real need to do any of that. None of the maps are what might be termed maze like maps where it might be useful to not show the fog of war.
