So I was wondering the best way to handle this.
I really don't want the PC to see all the stats, but be able to roll for them on attacks, saves, etc...

What ruleset? What do you mean by not wanting the PCs to see all the stats but make all the rolls and saves? If you are talking 5e and the spawned in berserkers you can either play the spawned in NPCs yourself (and so the PCs see nothing and get to make no rolls) or you can give the NPCs to the players in which case they’ll see all the stats and get to make the rolls. You could possibly create your own versions of the NPCs with no stats but all the attacks and saves intact. But NPCs need at least their hit points to be useful, so you can’t really hide all of the npc stats.

Pathfinder 1E - I Didn't see a way to give NPC control to a PC.

It’s for 5e but the principle is the same for all rulesets.
