I have one player whose dice freeze mid-air and the results appear very late too (1 min+). The animation seems to look the same for me, that player and all other players.
Is there a way to turn off the animation? I think this might already solve the issue.

There is no mechanism to turn off the dice animations; as they are a physics simulation that actually generate the die results.

It sounds like the user has some sort of issue with frame rates or their video drivers. Make sure that they turn off any overrides for their video driver for FGU; and that they are not using any overlays (Steam, XBox, etc.).

Additionally, they can try lower frame rates by typing /vsync 2, /vsync 3, or /vsync 4 in the chat entry box. (Default is /vsync 1)

The thing that really gets me is that they dice also float for me as a DM and the other players. Shouldn´t that at least be indipendent? Or is the angle/movement determined by the client of whoever rolls too?

The dice physics simulation is controlled by the client making the roll; and synched to each client visually. If the client making the roll is having graphics performance issues; that will affect what they send as well.
