When FGU is updating, the version always displayed on the right upper corner of the window is 4.0.0, and the date is 2020-11-09: see screeshot 42818
Why such version and date are displayed, whereas normally (not in the update window) the version is 4.0.6 and the date is 2020-12-23?

That's the version of the updater application, not the Fantasy Grounds application. They're two different application executables.

My question is why they have different versions/date? It's quite confusing..

Because they are different applications. Each application gets a version and date for when that application was created. The updater is version 4.0.0 and was released on 11/9/2020 . It hasn't been updated since then.
