I could have sworn that when I was signed up for FG in the past that the base rulebooks for a single game system were included, is that not the case anymore or am I missing something?

The free SRD content is a subset of the full books. It is certainly enough to get started but does not include all options that the core books have.

The 5E SRD is not designed to be used for play. It can be, but was actually designed to be used by third party publishers for a base or template for creating compatible content (arguably with the exception of the monsters and magic items). The 5E Basic Rules are also included for free with FG, and those are designed for introductory play.

Both the Basic Rules and the SRD include a small subset (a couple races with one sub-race each, the base classes, one sub-class/domain each etc) of what is in the PHB, DMG, MM.

In short, use the Basic Rules for character creation. Use the SRD magic items and NPCs for DM activities :)
