Budding DM here and even more budding FGU user.
Is it possible to have the players be able to control their movement up to their movement allowance per turn on the character sheet somehow without havin to lock tokens? Ie. I want to restrict the players in how much they move on their turn, but dont want to have to approve their movement as i feel that that MIGHT slow things down too much?

30' is 6 squares.
Move more and the red dragon gets fed.

As Damned implied, FG doesn't track movement. Just like when you are sitting around a table, it is up to you and the players to track movement. Most times, esp with gridded maps) it's really easy as it's only a handful of squares. Sometimes when I'm moving long distances (like 12-') then I will use the Quick Pointer (https://fantasygroundsunity.atlassian.net/wiki/spaces/FGU/pages/794722305/Area+of+Effect+and+Pointers) to draw a line or lines estimate the distance.

Also since FG only really tracks things in 2D there is no easy way to show the 30 feet movement was straight up into the air.
Also you need to have a talk with the group. I normally have token locking disabled but when the group gets into combat or near a trap and I need to know where they are I enable token locking. This works for my current group but the next group might hate it and do all of their movement base on movement speed so I would not need to use it with them.
The one challenge with Unity is with LOS. How will you handle it if one character runs off around a corner and finds a group of NPC's but the rest of the group had not moved at all and they are 3 rooms back on the map?

Turn one of the NPCs into the red dragon and have him eat the PC.

Simple, my players know that when an encounter is triggered, combat starts then and wherever their tokens are, that is where their PCs are. So if they are 3 rooms away, then they are 3 rooms away and the roaming PC is bound to coming running and screaming to get help, or they might just find the dead body of their companion when they get there.
Trust me, it won't happen more than twice! (Some players take a bit to learn!)

Same here. My group has a player who often explores. When a fight starts, they are where they are. Several TPKs were avoided by very narrow margins.
