Can I create an action to add a modifier ie AC +2 to a character in pathfinder for a round?

Check out the Drag and Drop Actions Powers and Spells (https://www.fantasygrounds.com/forums/showthread.php?50802-Pathfinder-2-Drag-and-Drop-Actions-Powers-and-Spells) extension, specifically their Nimble Dodge. It's a spell ability you can add to a character, so they can click the Effect button and it will automatically apply a +2 Circumstance bonus to their AC for the next action.

I can highly recommend the linked spell module.

If necessary, you can however also do without. You can add effects (e.g. AC:2) either in the effects window or on PC sheets (and add the relevant duration). After that, it's just a matter of applying it to the character on the combat tracker.
