For the UA Way of Astral Self Monk, is there a way to automate or add an effect that changes your ability modifier for strength to use wisdom for Strength check and Saving throws?

No, there is no mechanism to swap which ability score gets used for ability checks and saving throws. It will have to be something you guys track manually.

Would creating an ability on the character sheet with the following effect do what you need?

CHECK: [-STR], strength; CHECK:[WIS], strength; SAVE: [-STR], strength; SAVE: [WIS], strength
(Set targeting to SELF)

When you apply the effect from the character sheet, you should get an effect in the Combat Tracker that will remove the strength modifier and add the wisdom modifier to any strength checks/saving throws. You would need to remove/re-apply the effect if any strength or wisdom scores changed.
