The Ultimate license does not come with any DLC content. The only difference between the Ultimate license and the Standard license is whether players using the Demo license can join your game or not.

All licenses come with the D&D 5E and Pathfinder 1E SRD data installed. Additional SRD-supported data packs can be found in the community forum. All publisher-supported data packs are sold through the FG store as separate DLC packs.

Welcome!

Adding on to what Moon Wizard has already pointed out. Download the demo version and try it out. When you get a standard license that lets anyone with a stand license connect and play with each other. If you get a ultimate license then anyone can connect to you and play. Think of this as if you are going to DM then you might want a ultimate license if just a player get a standard license or if the DM has a ultimate license then you need nothing.

On buying books. If the DM has a copy of the book then the players that connect in can use that copy as long as the DM shares it out. If a player has a copy and the DM does not the DM can unlock the book for that player to use.

Also you might want to take a look at taking a free class at https://fantasygroundscollege.net/. You can take the "D&D 5e & FG New Users Intro Class" and get a good idea of how Fantasy Grounds works even if you want to use it with another gaming system.
