How do you guys handle the unarmed extra attack and the furry of blows if attacked mob is dead ?
Do you allow your mob to use the extra attack on an other target (if in range) and after spending 1 Ki point, do you allow to attack several mobs with 2 attacks if in range ?

If the Monk has movement left then they could move and attack another target if they have attacks still to make. If they have no movement left and there are targets in range then they can attack those targets. If they have no movement left and no targets then they can't attack anything with a melee attack.

(edit: this is no different from any other character with multiple attacks)

I let the monk make his primary attack before he has to decide if he wants to spend a Ki point for extra attacks. Also if the monk is Way of the sun soul he can use KI for ranged attacks after 3rd level.

If you are looking for how to do the unarmed attack I would go to the bottom of this post and download the Monk package. Then grab the unarmed attack from it.

The answer is included in the wording for flurry of blows. It doesn't have any limit on targetting.

Immediately after you take the Attack action on your turn, you can spend 1 ki point to make two unarmed strikes as a bonus action. You may make two unarmed strikes. Notice it doesn't say "target a creature and make two unarmed strikes against it". Sage Advice often cautions that you should not add wording that doesn't exist nor remove words that do.
