I did a quick Forum search for "homebrew" and came up with nothing. I'm a noob to FG. Has anyone tried to create their own monsters using FG? If so, how did you go about it?

There is an extension made by Maasq https://www.fantasygrounds.com/forums/showthread.php?45630-Engineer-Suite
That is used to import NPCs (I do not think he is maintaining it anymore, but I believe it still works)

And you can easily make a copy of a similar monster (Drag and drop the NPC back onto the list) open it and click the little lock to unlock it and modify it to your hearts content. :)

Not sure what ruleset you are referring to, but in general you can create any homebrew monsters yourself right in FG. Here is a video going over the process for 5e.

Importing is not the same as creating. I create monsters every gam session. It works great.

This UI is for D&D 5e, but it works similarly for all games. You go to the NPC window, and at the bottom click the red slash and the green plus appears. Click the plus and a new blank NPC window appears. Just fill in the blanks and you're good to go: 35221

The only part that is tricky is being sure that you use the right language. Make yours match exactly what the published monsters say. Even the commas and parenthesis. Again, for 5e, there is a guide here:
