I just awarded my PCs a potion of healing but it is showing up as just a "potion" on the PC's screens

The potion is probably unidentified. Open it as GM and ID it.

In the options there is a toggle where you can control whether items appear identified or not.

That option was removed about 2 years ago :)

All magic items now default to identified (previously default was unidentified). The only exceptions being the items in the DMG (which are unidentified) and some magic items found in treasure parcels in earlier modules created in FG.

Twas the Potion of Healing from the DD5e SRD Magic Items module. The ones in the other modules default to identified
