looking to find out if the unity version will allow me to load up everything to host a game at my work? I don't have access to the net there and am looking for a good mapping and campaign program and this seems to fit the bill

Yes, you can run it off line.

You will want to setup a client (on localhost) to display to your players.

Though this is an extension thread; https://www.fantasygrounds.com/forums/showthread.php?33834-Map-resize-to-TV-resolution-for-Face-To-Face-games

It shows examples of people using FG in face to face games. Lots of ways to do it, but some of these examples are with Trenloe when he would take a TV to his game store to run it. I've use FG via a LCD projector and on a bog screen TV.

To me, one of the big advantages of FG is that your computer hosts the 'server', so not only does all the content reside on your computer, but you can use it all without internet connectivity. Great for your use case or for when you want to work on your campaign while travelling.
