Question About Upgrading from Demo to Ultimate

I’m messing around with the demo for Unity and entering in class information from my physical copies of things like the Player’s Handbook. If I upgrade to the Ultimate, will all of that information remain, or would I have to enter it again or buy the digital books from Fantasy Grounds?

It will all remain. After you purchase your license, just go into settings, enter it and then do an update.
