Would I have to allow access to the DMG? Would that give players access to things they shouldn't have?

There's a player specific module with the classes, equipment and races (plus related images and a reference manual). So you just have to share that with them.

Or, as with all FG data records, right-click on them and share the individual record/s you want to allow your players to use.

I'm not sure what you mean. I have the DMG module loaded into my campaign but under "classes" it lists Anti-Paladin. If I'm not mistaken, this isn't the Oathbreaker oath presented in the book.

As Trenloe says there is a DMG players module which by default is shared with you players. That contains the oath breaker class.
