I've subbed for a month to check out FGU, but how to do I get started (e.g set up a game, invite people)? Most docs appear to be for the classic version.

Even more basic than that - do I have to 'host a game' in order to start building a campaign with baths and tokens? if player wants to build a character to join a game with, do they need to be joined to to host to start with? That isn't clear from the wiki.

Host Campaign > then...
I suggest you check out teh 5E Sample Campaign first, but then after that, create your own new campaign.

Host Campaign > New > select ruleset and define campaign details.

Note that FG-Con is coming up in April (just after your 1 month sub runs out unless you extend it) https://www.fg-con.com/ and is a great way to get into games and meet people.
