looks like WOTC are considering changing the stat block https://www.enworld.org/forum/content.php?6116-WotC-Considering-NPC-Stat-Format-Change

This reminds me of the stat block for castles and crusades and the rules for "non-binary" dwarfs should be interesting...do they have beards?

I don't think that means changing the stat block of an NPC; I think it means that when you get a one line NPC in an adventure they're thinking of making it more verbose.

No, because if the adventure has a line like 'Bob (NG, dwarven commoner)' then a complete NPC has to be created for it. What that convo you linked is saying (I think) is that the line in the adventure would read more like 'Bob is a neutral good dwarven commoner with darkvision out to 60 ft and red curly hair). So the NPC Stat block would not be any different.
