Just want to confirm...if I have the ultimate license, I don't need to buy the Pathfinder core rulebook, right? That is included by default? (Asking because it doesn't show as "owned" in the store.)

Not my game system but as far as I know the SRD modules for 3.5/Pathfinder come with FG, but not the full product with all of the Artwork etc.

Got it. So I could still run an Adventure Path/Module and have races/spells/classes available for my players?

The SRD material is available.
Additionally there is a thread in the Pathfinder section with over a dozen additional Pathfinder modules available.
The official Pathfinder material is an additional purchase.

The difference between the standard and Ultimate license has nothing to do with content. You get no additional content with the Ultimate license. You get the ability to host an unlimited number of free users.
From the product description;
...the ULTIMATE version of Fantasy Grounds. It has the same functionality and resources as the standard Full license but allows players to connect to you without owning a license.https://www.fantasygrounds.com/store/product.php?id=SWK03
