Hello,

Am I able to use my own map and use a fog of war in it, removed no it as my players go through?

Not sure I understand. Your own map can contain a fog of war, or not. If you share this map to your players they will see what is revealed.
You can use different maps, if you want different states for fog of war, but I would wonder why. Maybe if you share different views individually...
You can modify reveal/hide shared fog of war as you‘d like, e.g. adventurer passing an area, not remembering certain locations and re-enable fog, if desired. Is this what you mean?

Yes, maps in FG are any image (jpg or png) with an optional grid to align tokens to.

You can apply Fog to War to any image. You can remove this as your players explore, which reveals more of the image to them. It is not automatic. You need to clear the Fog as they explore.

You can also do this with crytic notes as they slowly find the scattered pieces...

Yes, although its already been answered I'll add the specifics

if you right click on the map whilst on FG as the DM a pop up will show a number of options, one of which is to enable a mask. Most us here are also throwing a grid during the same set of clicks which is another one of those click options. (which was also already mentioned)

revealing a mask is also relatively easy to do and there is more than one way to do it, however I expect you will discover it for yourself. If not just ask as there are quite a few folks online at any particular time who can answer your question.
