I want to play with friends all over the world but want to incorporate a video chat system with Fantasy Grounds VTT. What is the best solution for doing so?

Unless you can "force" the secondary app to "always be on top", you'll probably have to run FG in a window or have the video chat in a separate monitor and stream both screens. Alternatively, you can try something like OBS, which is designed to handle multiple video streams for things like Twitch. (https://obsproject.com/ --- and it's free).

I generally tend to stretch Fantasy Grounds across two monitors but only about 75% across monitor 2. I then have either Google hangouts or Skype running in a shrunken window taking up the final 25% of monitor 2.

Thank you for the replies! So then my players would have to also utilize a 2 monitor setup if they want to see the video chat as well?

It is not mandatory for the players to use two monitors. It entirely depends on their screen size and what software you will use. In general, the players have much less windows to manage on their desktops than the game master, therefore they might be totally OK with one screen.
