Quick and easy question hopefully...The description says that this product has "Tokens for nearly every monster"...does that mean from all the bestiaries? Just wondering...cuz this would seal the deal on if I pick this book up for FG.

Ultimate magic will only have artwork from the actual product itself, with the exception of any NPCs copied from elsewhere which will usually have an appropriate token. So, no, you won't get tokens from all the bestiaries in Ultimate Magic. To get all of those tokens you will need to get all of the bestiaries.
